Bradbury & Kopp [57] patented the manufacture of two unique extracts from cocoa shells; theobromine fraction and polyphenol enriched portion. The defatted cocoa shells is often extracted with a solution of acetone/h2o, and then the acetone needs to be divided, leaving just the aqueous solution.
